A Finger millet

Finger millet Badusha(बालुशाही)

     Ingredients

  1. Finger millet flour 25 g
  2. Wheat flour/ maida- 25 gm
  3. Baking soda -1 gm
  4. Baking powder- 5 gm
  5. Sugar- 100 gm
  6. cardamom powder 3- gm

Preparation :

  1. Mix – millet flour + maida + curd + ghee (make like chapati 
  2. Dough(चपाती कणके सारख बनवा ) keep for 30 min .
  3. Make lemon size balls of above dough, flat it & make impression 
  4. With your thumb in the middle.(छोटे गोळे बणवून चपटे करा आणि अंगठ्याने मधोमध छीद्र पाडा.)
  5. Take  a pan , add water  & sugar (2:1) & bring it to boil til it becomes string & thin consistency.
  6. Heat  oil – add 4-5 badusha & fry until becomes golden brown.cook on both sides.
  7. After frying dip them into sugar syrup(15 minutes)
  8. Remove from sugar cyrup. Let them dry
  9. Garnish with grated coconut & cashew nuts on top

Finger millet Cake(केक)

     Ingredients

  • Finger millet flour 100 g
  • 2.Cocoa powder – 5 gm
  • 3.Baking soda -1 gm
  • Baking powder- 5 gm
  • Sugar- 100 gm
  • Oil – 100 ml

Preparation :

  1. Pre heat oven (180 degree cel.) for 15 min. & sieve(चाळा ) all the dry Ingredients.
  2. Mix well  sugar powder & egg whites for 10 min. until nice floam. 
  3. Add cake gel & essence – mix well
  4. Add oil & milk to above mixture & mix them for 2 min
  5. Add millet flour + cocoa powder + salt + baking soda + powder to the egg mixture & make a fine  batter.
  6. Put batter in baking mold & place in the oven at 180 degree for 35 min. then take the cake out & wait for 10 min. serve it.
